Place the pork ribs in a pot or saucepan and add enough cold water to cover them. Add a few slices of ginger and 2 teaspoons (10 ml) of Shaoxing cooking wine. This step helps remove impurities and reduce any unwanted porky smell.

Once the water comes to a boil, choose one of the following methods:

Discard the blanching water and wash the pot. Add fresh cold water and bring it to a boil.

Add the corn, blanched pork ribs, and a few slices of ginger. Reduce the heat to low and simmer for 1 hour.

optional: Add the carrot and continue to simmer over low heat for another 15 minutes.

Add 10 g of salt, approximately 1¾ teaspoons of fine salt, and stir until dissolved. Turn off the heat and serve the soup hot.

optional: Taste the soup before serving. Add a little more salt if it is too bland, or add some hot water if it is too salty.
